A Bit Of Spice, Fire and a 90-Degree Turn

Let's face it, the British summer isn't exactly reliable, but that doesn't mean it has to stop you grilling!

A little creativity and planning mean you can have delicious smoked ribs and cocktails with your pals, even in the rain.

It's important to remember that when the air is cooler, the food is cooler. Things will take slightly longer to cook, and with meat and fish, it's always a good idea to do a temperature check before cooking (more on this later).

Adequate cover for your seating area is a MUST, but where there's rain, there's often wind. Make sure everything is weighted down to avoid chaos. In really gusty conditions, position your barbecue at 90 degrees to the wind.

On colder days, we all love our comfort food, right? Why not spice up your food to warm up your guests, or consider some hot and filling sides. Toasty jacket potatoes, chunky chips, and freshly cooked bread are all winning dishes.

Add fuel to the fire.

There's something about a firepit that instantly upgrades a gathering. If you're grilling into the evening, bring out the blankets and light the fire for a lovely intimate setting. If there are kids, some jumbo marshmallows on wooden sticks to toast always go down a storm.
